I’m in no way a food blogger, so these aren’t going to be the highest of quality photos or anything here, but I thought I would start sharing a few of my recipes that have been good and easy! I love a good and easy pasta recipe, so I’ll start with this one I made a few nights ago!
This was a use what we have sort of recipe the I came up with on a whim. I don’t have exact measurements, because I am terrible at measuring anything while I cook (or following a recipe for that matter). But because of this, I can eyeball pretty well!
Anyway, I hate reading a million words before a recipe, so here it is!

Ingredients
Package of linguine (any pasta will do!)
Field Roast Italian sausage, sliced (what we had, it would be even better I think with Soyrizo!)
Can of coconut milk
1 diced jalapeno
1/3 cup diced red onion
2 tbsp cilantro
1/2 lime (more if you really like lime)
2 tbsp corn starch
Salt and pepper
Steps
Boil your pasta water while you prep and dice your veggies and slice the sausage.
Add 1 -2 tsbp oil to a large skillet. Saute onion and jalapeno and salt and pepper together for 2 -3 minutes until softened.
Add sliced sausage and saute for a few more minutes, until it just starts to brown. You don’t want to overcook.
Add corn starch to the pan and stir. Cook for about a minute.
Add coconut milk. Cook until a small boil, then reduce heat and simmer until pasta is done.
Add lime and cilantro just before combining with pasta. Check for seasoning. It may need more salt and pepper.
Drain your pasta, and combine the pasta and sauce!
