
I am all about easy meals these days. With 2 toddlers who are picky as can be, I just don’t have the time or the energy to make something that’s complicated. I love to cook, but most days we keep it pretty simple.
We have been eating mostly plant based for about 2 and a half years now. We were 100% vegan for a year, and then we have continued to eat mostly plant based since then. Figuring out how to structure our meals and finding new recipes was a little difficult at first, but now I’ve got a handful of recipes that end up on repeat for us.

10 Easy Plant Based Dinners
1// Pasta with Bean Balls – these are a favorite of ours! I love this recipe.
2// Stir Fry with rice or quinoa, and veggies. Add chickpeas or tofu for extra protein
3// Black bean and veggie tacos – I usually make calabacitas which is zucchini, yellow squash, corn, onion, and green chili sautéed together. Add your black beans to the calabacitas for less dishes! Top with your favorite taco toppings!
4// Cottage pie – Shepherd’s pie but with lentils and veggies instead of beef. The recipe I use comes from this book!
5//Veggie burgers with sweet potato fries and salad- super easy meal. Either pre made from the store or its easy enough to make your own!
6// Buffalo cauliflower wraps or salads – I roast my cauliflower florets at 400 degrees until they are browned and starting to get crispy then toss them in buffalo sauce. I love Follow Your Heart vegan ranch with these! You can also add lettuce, tomato, carrots, and celery!
7// Fettuccine alfredo with coconut alfredo sauce – this is basically just canned coconut milk thickened a bit with either flour or corn starch. I will usually start by sautéing onion and garlic, then adding flour or starch, allowing it to cook for a minute, then add the coconut milk and season with salt and pepper and let it cook for a few minutes.
8// Roasted veggies, rice, and marinated, roasted tofu – super easy. Always drain your tofu and gently press the water out with paper towels. Cut into large chunks (like 4 or 8) and either marinade or season with your favorite seasoning. Roast away on a lightly oiled pan at 400 until the tofu starts to brown, flipping halfway through. You can also grill it but I would use foil so the tofu doesn’t break apart and fall into the grill.
9// Black bean and veggie enchiladas – That taco filling from earlier? Chop the veggies a little smaller and place into corn tortillas and either roll or stack and stick ’em in a casserole dish. Top with your favorite enchilada sauce (I like to layer my sauce into the enchiladas too) and throw it into the oven. You can also add vegan cheese to the top, but I don’t like it so I don’t!
10// Pizza! No, it’s not quite the same without cheese, but a lot of pizza dough you can find at the store is naturally vegan, and I just load it up with extra sauce and veggies! You can also add a plant based sausage to it or vegan cheese! I personally have not found a vegan cheese that I like at all, but the kids love it! Some of the better brands are Follow Your Heart, Myokos, and Violife.
